We are excited to bring you this incredibly well sourced and unique Ethiopian Sidama coffee. Traditionally Sidama are dry processed, but this coffee is a washed process. This means that the cherry is stripped of the green coffee bean during processing, rather then leaving it on. This helps to bring out an incredibly unique, floral cup. This coffee is very well sorted which helps to bring you an amazingly clean cup.
We want to emphasize the uniqueness of this coffee. Most coffees from this region come with a very wild, earthy tasting coffee. In some cases this can be great, but with our coffee it gives the farmers a better chance to sort the coffee. This ensures that every bean that is sent to us was hand chosen individually, making sure it has no defects. This is a fresh crop from Ethiopia that just arrived to United States. We are working with an importer that is working directly with farmers in Ethiopia. They are increasing sustainability for incredible coffees by providing fair prices that the coffee deserves. Doing this entitles the farmers to rigorously sort the coffee and give it the time it needs to mature and process.
Guji is a sub-city of Sidama in the Southern Nations, Nationalities, and Peoples’ Region (SNNPR) of Ethiopia in southern Ethiopia. In Ethiopia the beans are subjected to a rigorous sorting process from screen size, to color sorting, to meticulous hand sorting at the rate of 16kg/12 minutes.
